Château Pillebois Vieilles Vignes 2012 AOC Côtes de Bordeaux Castillon

A well-balanced year, fruity on the nose offering blackcurrant and blackberry aromas. Full and smooth on the palate. An outstanding vintage.

The wine

Family domaine situated on the fine gravel soils of Saint Magne de Castillon. This wine is produced from 35 to 60 year-old vines and has good ageing potential. Low yields, 40ha., production limited to 13,000 bottles per year. An excellent choice for fine wine lovers.

A good year, low yields, preferably drink before 2022.

Sand and gravel.

In the vineyard

Ploughing carried out on every other vine row using cover crops, no chemical weeding. Sustainable wine growing methods.

Winemaking

Following the harvest, the grapes are sorted by hand before going into vat. Traditional methods of vinification. Wines are aged for one year in 1/3 new oak barrels, 1/3 one-year oak barrels and 1/3 two-year oak barrels.

Merlot : 95 % Cabernet-sauvignon : 5 %

Serving tips

For optimum storage conditions, wines must be kept in a cool cellar at constant temperatures of 12°C to 17°C. Serve slightly cool at 17°C to 18°C, ideally open the bottle one hour before serving.

Country buffet, barbecues, charcuterie, red and white meats, poultry, mild and medium flavoured cheeses.
